Grades of honey

Honey should be stored in tightly sealed vessels - preferably glass or stoneware, in a dark and dry room, preferably at a temperature of about 15 degrees C. The temperature higher than 42 degrees C is deadly for honey, because it causes the destruction of enzymes and inhibins contained in it. It must not, therefore, be poured over boiling milk or water or boiled.

Linden honey - in its liquid state it is yellow or greenish-yellow in colour. After crystallisation, yellow-orange or brown in colour. Honey with an expressive aroma of Linden. Sharp in taste with light bitterness. Medicinal use: acts antiseptically and sedatively, antipyretic and antitussive. Applied in colds, anxiety and insomnia.
